These Watermelon Salad Cupcakes are so fun to serve and eat this summer!
I know these aren’t actually cupcakes, just like my viral watermelon cake wasn’t a traditional cake, but I think they kind of look like cupcakes.
And I love the ratio of fruit to lettuce with these Watermelon Salad Cupcakes.
I topped the watermelon with fresh mozzarella, arugula, fresh blueberries, almond slices, and a squeeze of lime juice (you could also add a drizzle of olive oil and a sprinkle of salt and black pepper).
You could even serve them in jumbo cupcake liners!
I first made and shared these in 2016 (8 years ago!) and it is one of my favorite watermelon salad recipes!

Watermelon Salad Cupcakes
These Watermelon Salad Cupcakes are a fun and delicious way to enjoy a few of your favorite summer flavors!
Ingredients
- Fresh Watermelon
- Fresh Mozzarella
- Arugula
- Almond Slices
- Blueberries
- Lime Juice
- Olive Oil, optional
Instructions
- First, cut your watermelon into thick cylinder slices using a biscuit/cookie cutter.
- Next, use the same biscuit/cookie cutter to cut the fresh mozzarella slices into disk shapes and place one on top of each cylinder of watermelon.
- Then top the watermelon and mozzarella with arugula, blueberries, almond slices, and a squeeze of lime juice (and olive oil – if desired).
- Serve and enjoy!
