
Before I get to the mouth watering Caprese Breakfast Sandwich I thought I would share with you a little bit from our fun Ohio adventure. As a child my husband grew up visiting his grandparents at their Ohio farm every summer and spending a few weeks with them. Before we were married I had the opportunity to visit this cute little farm too and ever since we’ve been married – a whopping 2 years – we have visited the farm every summer with his parents.
Not only is it wonderful being able to visit with his sweet and hilarious grandparents twice a year (summer in Ohio and winter in Florida), but it’s also wonderful to travel back in time and enjoy some wonderful memories while making many new ones!

On Friday we headed to a local county fair. There were rows of rabbits, chickens, cows, and pigs. I must admit I only visited the rabbits… Between horrible allergies and not being a fan of the smell I claimed I only liked things that smelled like flowers. Roger joked that I shouldn’t be at a fair then… about five minutes later we silently walked through a white tent filled with beautiful flowers being judged for style and beauty – and they smelled heavenly! But that wasn’t the only thing that smelled good at the county fair! There was food everywhere! We ate funnel cake, frozen lemonade, fries, and my personal favorite, a deep fried Twinkie! I seriously gained five pounds!

On Saturday we searched for arrowheads on an unplowed/unplanted field. Roger and I also went exploring through a field of corn – during which time my legs were eaten alive, I even have bug bites on my forehead! He loved disappearing in the thick and high corn leaving me behind – confused, lost, afraid of corn snakes, and too short to see above the corn – I would wonder around until he sneaked up behind me and scared the living day lights out of me! Husbands. Can’t live with them but wouldn’t want to live without him!
But now it’s back to reality. Roger’s started his 3rd year of dental school and Domestically Blissful will be back to it’s usual schedule!

First things first – this Caprese Breakfast Sandwich!
If you haven’t noticed I have a special love for caprese salads. After creating and devouring the Fried Mozzarella Stack I started imagining new and fun ways we could enjoy a good caprese. Of course caprese salads are known as being a good appetizer for lunch and dinner, but I couldn’t help but dream of a world in which I could enjoy a good caprese salad for breakfast!

So of course the most natural thing would be to combine my love for breakfast sandwiches with my love for a caprese salads. This Caprese Breakfast Sandwich has all the wonderful flavors of a caprese salad inside a warm and delicious breakfast sandwich!
Ingredients:
English Muffin
Butter – optional
Pam or Olive Oil
1-2 eggs
Salt and Pepper
1 semi thick slice of Mozzarella Cheese
1 Sliced Roma Tomato
2-3 large Basil Leaves
Balsamic Vinegar
First, cook the eggs how you like to eat them. For this recipe I like to break the eggs and run a knife through the yoke and the egg whites swirling the two colors together – without actually blending them together. I cook them in an egg pan sprayed with Pam at medium heat and sprinkled with some salt and pepper. (In these pictures you might notice that I cut off the edges so that it would look good for the pictures – normally I would just let the extra egg hang off the sides. YUM!)
While the eggs are cooking warm the inside of the english muffin. There are two ways that you can do this. The first is by placing them in a toaster – giving the muffin a crispy crunch. The second option is to spread a little bit of butter on the inside of both halves and warm them up on a pan on the stove at medium heat.
Once the eggs are cooked to your liking and the muffin is warm it’s time to assemble the Caprese Breakfast Sandwich!
Place the egg on the bottom half of english muffin, then add the slice of mozzarella cheese, the tomatoes, basil, and top it off with a drizzle of balsamic vinegar and the top of the english muffin! – you could place the mozzarella between the muffin and the egg to make it extra melty but I prefer it this way so that the tomato stays fresh.
My mouth is watering just thinking about this Caprese Breakfast Sandwich… I just love how the warm egg and muffin makes the mozzarella cheese slightly melty – seriously so good!
