This Quick Mediterranean Pasta is one of our favorite dinner recipes!
Between the fresh Mediterranean flavors and colorful veggies, this pasta dish leaves you feeling happily full with your tastebuds satisfied.
Plus this vegetarian pasta recipe is SO easy to make and it’s super versatile!
For example, while we used both kalamata olives and black olives, you could choose just one kind for your pasta dinner.
We also included both sun-dried tomatoes and cherry tomatoes, but you could easily just choose one or the other, or any other kind of tomato!
And of course you can use any type of pasta that you already have on hand.
We even did a mixture of both sweet basil leaves along with some purple basil that we have growing in our garden.

And speaking of our garden, I have a feeling that once our tomatoes and zucchini are ready to harvest we will be eating and enjoying this recipe even more!
I also foresee a lot more varieties of zucchini bread and last-minute homemade marinara pasta dishes in our future too!
Good grief, I’m getting hungry just thinking about all of the fun recipes we will be eating soon with all of the fresh homegrown ingredients from our first garden!

Ingredients
- 1/2 Pound Dried Farfalle Pasta
- 1/4 Cup Extra Virgin Olive
- 2 Garlic Cloves, minced
- 1/2 Cup Cherry Tomatoes, cut in half
- 1/2 cup Red Pepper, diced
- 3/4 cup Zucchini, diced
- 1/4 Teaspoon Salt
- 1/4 Teaspoon Black Pepper
- 1/2 Teaspoon Dried Basil
- 1 Teaspoon Dried Parsley
- 1/2 Cup Artichoke Hearts
- 1/2 Cup Olives (Black Olives, Kalamata, or a mixture of both)
- 1/3 Cup Sun-Dried Tomatoes
Optional Toppings
- Feta
- Basil
- Extra Virgin Olive Oil
Instructions
- First, cook the pasta according to the packaging instructions.
- In a large pan heat the 1/4 cup olive oil over medium heat and cook the minced garlic for one minute, or until fragrant.
- Stir in the 1/2 cup cherry tomatoes, 1/2 cup diced red pepper, 3/4 cup zucchini, 1/4 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon dried basil, and 1 teaspoon dried parsley.
- Cook the fresh vegetables for 3 minutes, stirring occasionally, then add the 1/2 cup artichoke hearts, 1/2 cup olives, and 1/3 cup sun-dried tomatoes.
- Continue cooking for 3-5 minutes until all of the ingredients are hot.
- Next, drain the pasta and fold it into the vegetables adding salt and pepper to taste.
- Top with feta, basil, and a drizzle of olive oil.
- Enjoy!
