These Watermelon Salad Cupcakes are so fun to serve and eat this summer!<\/p>\n\n\n\n

I know these aren’t actually cupcakes, just like my viral watermelon cake wasn’t a traditional cake, but I think they kind of look like cupcakes.<\/p>\n\n\n\n

And I love the ratio of fruit to lettuce with these Watermelon Salad Cupcakes. <\/p>\n\n\n\n

I topped the watermelon with fresh mozzarella, arugula, fresh blueberries, almond slices, and a squeeze of lime juice (you could also add a drizzle of olive oil and a sprinkle of salt and black pepper).<\/p>\n\n\n\n

You could even serve them in jumbo cupcake liners! <\/p>\n\n\n\n
