nachos topped with some of my favorite greek flavors, like tzatziki, feta, cucumbers, kalamata olives, and so much more!<\/p>\n\n\n\n<p>A couple of years ago I shared a recipe for parmesan garlic roasted chickpeas and for today\u2019s recipe I decided to create a spin-off of this recipe but in a heart-healthy way.<\/p>\n\n\n\n<p>So when roasting the chickpeas and chopped red pepper I swapped the olive oil for&nbsp;<a href=\"http:\/\/cbi.as\/a3p1t\" target=\"_blank\" rel=\"nofollow sponsored noopener\">Mazola\u00ae Corn Oil<\/a>.<\/p>\n\n\n\n<p>It\u2019s a simple swap that makes me feel wp-block-group-is-layout-flow\">\n<p>I wanted this to be a simple, yet fresh&nbsp;recipe twist on the common nachos.<\/p>\n\n\n\n<p>So I found 5 ways to make this&nbsp;Greek Nachos extra delicious and fresh.<\/p>\n\n\n\n<p>First, I used chickpeas instead of chicken.<\/p>\n\n\n\n<p>And since Roger and I are both vegetarians this was an easy swap, but for those who enjoy Meatless Monday, I hoped that this would be a fun addition to your meal plan.<\/p>\n\n\n\n<p>Then, I swapped out the olive oil for&nbsp;<a href=\"http:\/\/cbi.as\/a3p1t\" target=\"_blank\" rel=\"nofollow sponsored noopener\">Mazola\u00ae Corn Oil<\/a>.<\/p>\n\n\n\n<p>Thirdly, I used pita bread instead of chips.<\/p>\n\n\n\n<p>Next, I baked the chickpeas instead of cooking them on the stove.<\/p>\n\n\n\n<p>And finally, I topped these Greek Nachos with lots of colorful vegetables.<\/p>\n\n\n\n<p>Now that I\u2019m looking at these pictures again I\u2019m remembering how delicious these easy Mediterranean
