Let me start off by saying that I wrote this post & then I ate all of my Strawberry Fruit Leathers before taking pictures… Major Oops! So I had to make them again… Bummer right? And this time I managed to take pictures!

So now on to the original Strawberry Fruit Leathers post!

Last Friday I noticed that our strawberries were starting to go bad & since we were going to be gone all weekend I knew I had two options, blend & freeze for smoothies or make Strawberry Fruit Leathers. I decided to opt for the Strawberry Fruit Leathers!

I made this decision exactly 6 hours before I expected my husband home (at which point I needed to have us both packed for heading back to Tennessee) & I knew that it took at least 6 hours to bake/dry. So I knew I was hitting it kind of close, but I was determined to have me some Strawberry Fruit Roll Ups no matter what!

Last summer when I shared with you my recipe for Watermelon Fruit Leathers I set my oven at the lowest temperature 175°F & baked it for over 6 hours. I knew I didn’t have a leisurely amount of time to dry out the fruit & since I know there is a chance your oven doesn’t go that low I decided to set my oven to 200ºF. Although they turned out well I have decided that I prefer setting my oven to the lower temperature (175ºF) & baking longer because I noticed that the edges were way crispier than last time, while the center was still slightly sticky.

When I went back to see how much sugar I added to the Watermelon Fruit Leathers I was completely shocked! I definitely did not want to use that much again, actually I didn’t want to use any at all, so I decided to sweeten these Strawberry Fruit Leathers with honey instead. I highly suggest using honey that is local to your area. I have noticed over the years that the more I intake local honey during the spring & fall the more willing I am to go outside & the less I feel like my allergies are slowly trying to kill me.

Another great thing about making these Strawberry Fruit Leathers is that I didn’t have to strain any excess liquid like I did for the Watermelon Fruit Leathers! The process was so simple & fast, I daresay it might have been the quickest prep work I have ever done for a recipe!

These Strawberry Fruit Leathers are the perfect way to use up aging strawberries & they are definitely the most delicious homemade fruit leathers I have ever made!

So without further ado here is my recipe for Strawberry Fruit Leathers!

Strawberry Fruit Leathers

Ingredients

Scale
  • 3 1/2 Cups Cut Strawberries
  • 3 Tablespoons Honey (optional)

Instructions

  1. First, blend/puree the strawberries & stir in the honey.
  2. Pour the pureed strawberries on a pan lined with heat safe plastic wrap & spread evenly with a spatula.*(1)
  3. Place in your oven, at 200ºF or the lowest temperature possible (recommended 175ºF), for 6-8 hours until the leather is no longer sticky.
  4. Remove the plastic from the leather, cut into strips with a pizza cutter, & roll it up with strips of parchment paper.
  5. Enjoy! *(2)

Notes

  • *1. Try to keep it away from the edges so that it will be easier to pull off later (nobody wants to eat the edges of plastic either).
  • *2. Keep stored in a slightly opened contained for up to a week (If it is in an airtight container it might get too moist & stick together). Although you will probably eat them all in a day like I did!

  1. My husband has used the local honey strategy to prevent allergies and I think it really helps him! Thankfully I’ve never had any problems with seasonal Allergies. These look so, so tasty, and really healthy, too!

      It’s amazing how wonderful local honey works! I probably consume it too quickly, especially because it can be a little more expensive, but it tastes so good & it really helps.

    These are soooooooo wonderful, i mean look at colour -wow.
    I am tempted to try these, but can i use parchment paper instead?

    1. Thanks Shweta! (I love your name btw!) I am so happy you like what you see! I have never used parchment paper & I worry that it would soak up the liquid of the pureed strawberries or cause it to stick. The first time I made fruit leathers I was worried the plastic wrap would melt, but the oven is at such a low temperature it doesn’t melt it. Another option is to use a Silpat Non Stick Baking Mat. I don’t own one yet, but it is on my wish list of kitchen tools & equipment! Hope that helps! 🙂
