Vegetarian Chorizo Spinach Cheese Puffs

Ingredients

  • 4 Ounces Cream Cheese, room temperature
  • 1 Large Egg
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 Cup Fresh Baby Spinach, chopped & packed
  • 1/2 Cup Feta, crumbled
  • 3/4 Cup MorningStar Farms® Chorizo Crumbles, defrosted
  • 1 Teaspoon Fresh Parsley, chopped
  • 1 Pinch Salt
  • 1 Pinch Pepper
  • 1 Sheet Frozen Puff Pastry, thawed
  • 1 Tablespoon Butter, Melted

Instructions

  1. First, preheat your oven to 400 degrees Fahrenheit & spray a muffin tin with oil. *(1)
  2. In a small bowl mix, the 4 ounces cream cheese, 1 egg, & 1 tablespoon extra virgin olive oil together.
  3. In a large bowl mix, the 1 cup chopped spinach, 1/2 cup feta, 3/4 cup MorningStar Farms® Chorizo Crumbles, 1 teaspoon parsley, 1 pinch salt, & 1 pinch pepper.
  4. Mix the cream cheese mixture into the large bowl of dry ingredients with a spoon until combined & then set it to the side.
  5. Cut the puff pastry into 9 squares & place each puff pastry square in a muffin tin, stretching each square if needed, & pressing the puff pastry into the base of each tin.
  6. Divide the chorizo spinach cheese mixture between the 9 puff pastry muffin tins & cover the filling with the 4 points of the puff pastry.
  7. Brush with butter & bake for 15-18 minutes, or until fluffy & golden.
  8. Let cool & enjoy!

Notes

  1. If you are using a darker muffin tin be sure to lower your baking temperature (to about 375 degrees Fahrenheit) & adjust the baking time (it may take a few extra minutes to bake).
