I’ve said it before and I’ll say it again.

Soft tacos are one of my absolute favorite entrees and brunch is one of my favorite meals!

So, of course, the combination of soft tacos and brunch is pretty much going to make my day.

While some people may think that Breakfast Black Bean Tacos are only for the AM, I think they are great for any time of the day!

Whenever I make tacos there are three things that I have: cilantro, sour cream, and of course a good salsa.

While shopping for my favorite meal at Walmart I couldn’t decide between Pace® Medium Picante Sauce and Pace® Chunky Salsa Medium, so I decided to get both.

Although I decided to keep both on hand for mealtime I eventually decided to serve the Pace® Medium Picante Sauce with these Breakfast Black Bean Tacos for Taco Night.

And just like Tuesdays are for Tacos. Tacos are for Pace®.

I must admit, I would gladly have tacos every night!

If only I could get Roger to agree to it too!

Luckily, I know Roger loves breakfast for dinner as much as I do.

So maybe I can convince him that we should have dinner tacos twice a week, one for regular tacos and one for breakfast tacos.

I’m thinking, Taco Tuesday and Taco Thursday!

With both taco nights featuring America’s favorite salsa for tacos, Pace®! I love that Pace® has a bold kick of flavor that goes perfectly with these black bean tacos.

Now that I’m craving these tacos again, it’s time to convince Roger that we need 2 taco nights a week!

And I’m thinking this recipe will win him over!

These Breakfast Black Bean Tacos are an easy meatless recipe that is great for brunch or Taco Tuesday!

Ingredients

Scale
  • 6 Soft Taco Tortillas
  • 6 Eggs, scrambled & cooked to taste
  • 1 Can Black Beans, rinsed
  • 1 Cup Cherry Tomatoes, sliced
  • 1 Avocado, diced
  • Sour Cream, to taste
  • Queso Fresco, to taste
  • Pace® Medium Picante Sauce, to taste
  • 1 Bunch Cilantro, chopped
  • 1 Lime, sliced

Instructions

  1. Layer the 6 soft tortillas with eggs, black beans, tomatoes, and avocado.
  2. Top your tacos with sour cream, queso fresco, Pace® Medium Picante Sauce, cilantro, and a squeeze of lime.
  3. Enjoy!
