Caprese Stuffed Avocado
This Caprese Stuffed Avocado is the perfect little vegetarian appetizer for your next dinner party or date night at home.
Ingredients
- Avocados
- Cherry Tomatoes, sliced
- Mini Mozzarella Balls
- Fresh Basil
- Salt, to taste
- Black Pepper, to taste
- Balsamic *(1)
- Extra Virgin Olive Oil
Instructions
- First, slice & pit the avocados.
- Next, fill the avocado centers with sliced cherry tomatoes, mini mozzarella balls, & fresh basil.
- Sprinkle with salt & pepper.
- Drizzle with balsamic & olive oil.
- Enjoy!
Notes
- If you prefer a balsamic reduction simply pour the balsamic in a small pan & bring it to a simmer at medium heat, then reduce the heat to low once it begins to bubble & let it simmer for 10-15 minutes until thickened. I reduce between 1/4 & 1/3 cup, but it depends on how much balsamic reduction you desire.
