If I could describe this recipe in two words it would be “Oh, yum!”

A couple of years ago, when Roger was in dental school, I baked an acorn squash filled with cream & I was happily surprised by how much Roger enjoyed it. Fast forward to last fall, we had no oven, no cabinets, & a completely bare kitchen. So baking anything last fall in our home was completely out of the question.

And although I’m not sure what I put in it two years ago, I had a lot of fun adding fresh herbs & seasonings to this fall baked dish!

I recently bought a whole bunch of new herb plants & I am determined to keep them alive. I’ve been moving them about the house as I try to figure out where they will get the most sun, while still being in a central location so that I don’t forget to water them.

I’m not exactly sure what happened to my green thumb, but somehow I lost it when I got married. All through middle school, high school, & college I cared for a variety of plants & trees in my bedroom. But as soon as I got married every plant I bought died… Even the one I had taken care of since 7th grade! 

So now I’m trying to grow back my green thumb & hopefully, I will be able to keep these herbs alive through the rest of fall & winter. If you have any tips, please be sure to message me! 

But back to this creamy good recipe!

This Creamy Baked Acorn Squash is a combination of fall flavors and something reminiscent of homemade alfredo sauce made all in one dish for minimal cleanup! As can be expected, it can take some time to thoroughly bake acorn squash, but once it is tender the flavors come together perfectly. 

It’s one of those recipes where you can start it, work on a bunch of other things (like creating side dishes or a dessert), & then come back to it near the end to bring all of the flavors together & add the finishing touches.

I must admit, I love these types of recipes. I feel extra accomplished when I have dinner cooking while I do dishes, laundry, etc. Especially when the recipe turns into a delicious dinner for two! 

While this is a perfect recipe for two, you can easily double or quadruple the recipe for however many people you have at your family gathering or dinner party. And I must admit, I especially love the crunchy pumpkin seeds sprinkled on top!

Creamy Baked Acorn Squash

Ingredients

  • 1 Acorn Squash
  • 1 Tablespoons Butter
  • 1 Tablespoon Cream Cheese
  • 1/2 Cup Heavy Cream (Half & Half can be substituted)
  • 4-6 Fresh Thyme Sprigs
  • 2 Fresh Rosemary Sprigs
  • 2 Fresh Sage Leaves
  • 1/4 Cup Parmesan (Grated)
  • 1 Pinch Salt
  • 1 Pinch Pepper
  • Pumpkin Seeds

Instructions

  1. First, preheat your oven to 400 degrees Fahrenheit.
  2. Next wash & cut your acorn squash in half. Remove & discard the seeds from the acorn squash with a spoon.
  3. Fill a baking dish with 1 inch of water, than place your acorn squash, cut side down, in the baking dish.
  4. Bake the acorn squash for 25-30 minutes, until tender. *(1)
  5. Carefully remove the pan from the oven, drain the water, & place the acorn squash back in the pan, cut side up. *(2)
  6. Divide the 1 tablespoons of butter, 1 tablespoon cream cheese, & 1/2 cup heavy cream between the two halves of acorn squash.
  7. Top each half of the acorn squash with the fresh springs of thyme, rosemary, & sage leaves.
  8. Bake for 5-10 minutes or until bubbly.
  9. Carefully remove the fresh herbs, stir the creamy ingredients in the acorn squash, & top with Parmesan & a pinch of salt & pepper.
  10. Bake for an additional 5 minutes & once the cheese is melted & bubbly remove the acorn squash from the oven.
  11. Top with a sprinkle of pumpkin seeds & fresh herbs & serve immediately.

Notes

  • *1. It is tender when a fork can easily pierce the flesh of the acorn squash. Depending on the thickness of the acorn squash it can sometimes take 45 minutes to become tender.
  • *2. If your acorn squash is not flat on the bottom, you might need to slice a thin layer off the bottom to create a flat surface so that it sits up right without falling over.
