Pretty much any type of streusel bread is going to be a huge hit in our home.

Roger loves streusel on baked goods, so I know adding some (and by some I mean a lot) on top will always make him love a recipe even more.

Since we loved this Cherry Streusel Bread so much earlier this year, I thought it would be fun to create a Streusel Blueberry Bread this summer with fresh blueberries.

And while I love this one *almost* equally as much, I have to admit that because I love fresh cherries just slightly more than fresh blueberries (although I love blueberries), the Cherry Streusel Bread is still my favorite.

But no matter where you rank blueberries on your list of favorite summer fruits, you will absolutely love baking and eating this Streusel Blueberry Bread!

I was so eager to start eating this yummy breakfast and brunch summer baked good that I completely forgot to make the icing to drizzle on top of it.

So while you don’t see any icing in the pictures, I have included my go-to icing recipe below that you can add to yours if you like.

But no matter how you top your Streusel Blueberry Bread, this sweet breakfast treat is sure to be a delicious use for all of the beautiful blueberries you pick this summer!

Although fresh blueberries down here in southeast Tennessee aren’t going to be as plentiful this year.

Our 3 little bushes of berries were happily enjoyed by deer.

And both my mom’s and Roger’s mom’s blueberries (and they both have many massive bushes) were greatly affected by the late freeze we had this year.

So that means we need to pick our blueberry recipes extra carefully this summer.

Streusel Blueberry Bread

This Streusel Blueberry Bread is made with fresh blueberries and topped with lots of sweet crumble for a deliciously soft breakfast and brunch sweet treat.

Streusel Ingredients

  • 1 Cup White Sugar
  • 2 Cups All-Purpose Flour
  • 6 Tablespoons Melted Butter

Icing

Instructions

  1. First, spray the bread pans with oil and preheat your oven to 350 degrees Fahrenheit. *(2)
  2. In a medium bowl, mix the 2 & 1/2 cups all-purpose flour, 1 cup sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.
  3. In a separate bowl mix 1/2 cup whole milk, 1/2 cup creamer, 2 large eggs, 8 tablespoons cooled melted butter, and 1 teaspoon pure vanilla extract.
  4. Create a funnel in the dry ingredients and pour the liquid mixture into the center.
  5. Mix with a spoon until combined. *(3)
  6. Gently fold in the 2 cups of blueberries until evenly dispersed.
  7. Spoon the blueberry bread batter evenly between the two bread pans. 
  8. In a small bowl mix 1 cup white sugar, 2 cups flour, and 6 tablespoons butter.
  9. Use your hands to create crumbles and sprinkle all of the streusels crumbles evenly between both bread pans of blueberry bread batter and bake for 50-55 minutes or until a toothpick comes out clean. *(4)
  10. Once baked, let cool for 10 minutes on a cooling rack before removing the bread from their bread pans. Then let cool completely for another hour.
  11. Mix 1 & 1/2 cups confectioners sugar, 3 tablespoons milk, and 1/2 teaspoon vanilla extract. 
  12. Once the Streusel Blueberry Bread has cooled drizzle with icing. Enjoy! *(5)

Notes

  1. Make sure not to scoop right from the container, this will compact the flour and be too much. Scoop with a spoon into your measuring container and level it off with the back of a butter knife for more accurate measuring.
  2. If you are using a dark bread pan be sure to lower your baking temperature (to about 325 degrees Fahrenheit) and adjust the baking time (it may take about 15 minutes longer to bake in a dark pan).
  3. Don’t over mix. Some lumps are normal.
  4. When a toothpick comes out clean your bread is done baking.
  5. Store your bread in a sealed container for up to a week.
