My husband grew up in a pretty large family with three older sisters and one younger brother.

So when we get together for family gatherings there are a lot of us, like 20+ people.

I love it! 

Every year we have a Mexican Christmas Eve dinner at my in-law’s house.

We eat dinner, exchange presents, and watch one of our family’s favorite Christmas movies. 

So this year I thought I’d get a jump start on planning what recipes I’ll make for this festive family dinner and any other holiday parties that may come our way.

And one of the first recipes that came to mind were these cheesy Black Bean, Cheddar, and Corn Taco Bites. 

Earlier this year, we met his family out by the river for a Mexican picnic dinner and I brought these taco bites with me. They were a huge hit!

So I decided that these cheesy Black Bean, Cheddar, and Corn Taco Bites made with Tillamook Farmstyle Thick Cut Sharp Cheddar Shreds (Tillamook cheese is now available nationally at Target! Our family loves a good cheese and it’s great to know that Tillamook Sharp Cheddar ages over nine months so that the is sharpness just right. We love that the shreds are thicker (aka farmstyle) so you can enjoy even more cheese and flavor with every piece.

These bite-sized tacos are the perfect cheesy appetizer for people to enjoy while the last details of dinner are finalized or while you are waiting for all of your guests to arrive.

My family loves these cheddar taco bites because they are customizable and everyone can top their own with their favorite toppings.

And you can easily eat and enjoy them while standing, walking, and talking at your next holiday party.

And speaking of decorating, I had so much fun decorating our breakfast nook to display this cheesy Black Bean, Cheddar, and Corn Taco Bites appetizer. 

You can prep this finger food recipe earlier in the day and then keep them in the fridge until right before your guests arrive. 

They only take 10-12 minutes to bake, which is just enough time to put some finishing touches on your holiday party decor.

Then all you have to do is top them, plate them, and wait for your guests to arrive to enjoy them with you!

Instructions

  1. First, preheat your oven to 350 degrees Fahrenheit. 
  2. Next, use a biscuit cutter to cut large flour tortillas into mini tortillas.*
  3. Place one mini tortilla inside each mini muffin pan cup.
  4. In a small bowl mix the black beans, corn, and Tillamook Farmstyle Thick Cut Sharp Cheddar Shreds.
  5. Place a spoonful of the mixture into each mini tortilla cup.
  6. Bake your Black Bean, Cheddar, and Corn Taco Bites for 10-12 minutes or until lightly brown.
  7. Remove from the oven and let cool slighty.
  8. Top each Black Bean, Cheddar, and Corn Taco Bite with a tiny dollop of sour cream and cilantro.
  9. Serve immediately and enjoy!

  1. One tortilla makes 8 mini tortillas.
