I was so excited to make these Mini Caramel Apples … maybe a little too excited. Unfortunately, they didn’t turn out exactly as I planned. Although they look pretty in these pictures I ran into several difficulties and it took a little longer than I was planning. On the upside, my sweet tooth is completely satisfied and I had fun taste testing throughout the whole process!
What you’ll need:
An Apple
Melted Caramel
Chopped peanuts, sprinkles, mini white or dark chocolate, or any other chopped candy – like oreos!
Skinny twigs, toothpicks, or pretzel sticks
Mini muffin liners

First, clean the apple and use the Melon Baller to cut out the mini apples. I picked out 2 large apples and was able to cut out 22 mini apples from each apple, giving me 44 mini apples to work with – that’s a lot!
Next, melt the caramel according to the packaging directions. Make sure to keep an eye on the caramel when microwaving it, I stepped away for what felt like a second and my caramel burned, so sad!
I found that the best way to keep the caramel from hardening too quickly was to microwave them in a glass bowl – following the directions on the package – then I placed the melted caramel on a pot of boil water to keep it warm. If you do this, make sure that the boiling water doesn’t splatter everywhere.

Take one of the mini apples, pat it dry with a paper towel, and place it in the caramel top down. Using a toothpick flip the apple over, stick the toothpick into the top of the mini caramel apple, and twirl it around until it is completely covered. Set the mini caramel apple in a mini muffin liner then remove the toothpick and insert the twig in its place.

Originally, they looked like the photo above, at least for about 15 minutes, and then the caramel began to slide off the mini apples.

I then decided to try dipping them in chopped peanuts before placing them in mini muffin liners. For some reason the caramel and nuts seemed to stick well to the mini apple as I took my time taking pictures of them.
They are now sitting in my refrigerator until my husband comes home so that we can enjoy them together and they are still looking good. There was a little melting on the bottom during their photo shoot, but not too much that it was a mess and refrigeration definitely helps!

I don’t recommend you make these ahead of time for a party, but if you have your heart set on them I suggest coating them in nuts, chocolate, sprinkles, or candy, place them in individual mini muffin liners, and keep them cold until the last possible moment.
Even with the problems I had, I will probably be making these again in the future just because they are so cute and so festive for the autumn season!

Very creative! So cute!
The best way I’ve found to keep the caramel on adds two steps to this process. First, make sure to pat the apple balls dry to remove as much juice as possible. Second, melt some of those wilton chocolate melts, and coat the apples in a light layer of chocolate. Refrigerate until set, THEN dip in the caramel. This seemed to work.
Just tried these, and tried dipping them in graham cracker crumbs. They were certainly delicious, but the caramel slid off after about twenty minutes. Did you manage to get the caramel to stay on for an extended amount of time? I am considering these for a party and am curious as to whether you think they will stand up to it.
They didn’t last very long before they were consumed, so I am not exactly sure how they would hold up for an extended period of time. After I dipped and covered them I spent about 15 minutes taking pictures of them and then I placed them in the fridge until it was time to eat and they held up pretty good when chilled. For a party I would suggest keeping batches of them in the fridge and just pulling them out as needed. I hope that helps!
Just. So. Cute. And perfect for everyone who’s mouth isn’t the size of a monsters. Normal caramel apples are delish but so dang awkward to eat! Pinning for later 🙂

Mmmm…. These are always my weakness at the fair! I’ll have to try them at home. I’ve made a dip with caramel and Skor pieces before and they go together really well.
