Oven Roasted Zucchini

I never grew up eating a lot of zucchini (I’m not even sure if I liked it as a kid), which is strange because I know my mom planted zucchini in her vegetable garden. In the last five years I have come to love zucchini, especially Oven Roasted Zucchini.

 

Ingredients:

Zucchini

Olive Oil

Lemon

Italian Seasoning

Thyme

Basil

Oregano

Parmesan

Place the cleaned and sliced zucchini sticks in a single layer on a pan sprayed with oil (I like to put foil down for quicker clean up).

 

Next, drizzle olive oil and lemon juice across the zucchini.

 

– The olive oil and lemon will help the seasonings stay on the zucchini sticks –

 

Finally, sprinkle on your Italian seasoning, thyme, basil, and oregano.

 

With your oven on broil, place the zucchini sticks on the middle rack and cook for about 5-8 minutes, until lightly browned.

 

Serve the Oven Roast Zucchini sprinkled with Parmesan – and maybe even an extra splash of lemon!
