I know I said earlier this week that I was going to be sharing fall content moving forward, but I couldn’t fully move into autumn without first sharing this tasty end-of-summer savory and sweet treat.

While we don’t have an actual outdoor grill, we have found over the years that our cast iron grill pan allows us to make some of our favorite grilled foods.

And bonus, we can skip grilling in the hot and humid Tennessee heat by grilling indoors in the nice cool A/C.

I wish we could eat this every week!

But I can’t decide what my favorite part of this summer board is, between the crunchy sourdough crostini, the creamy burrata, juicy summer tomatoes, sweet local peaches, and fresh basil it’s just oh-so-good!

This Peach Burrata Board is covered in roasted peaches, juicy tomatoes, fresh basil, and creamy burrata and served with crunchy crostini.

Ingredients

Scale
  • 3 Peaches
  • 12 Vine Ripe Tomatoes
  • 2 Burrata 
  • 1 Sourdough Baguette
  • 1 Bunch Fresh Basil
  • Extra Virgin Olive Oil, to taste
  • Salt & Black Pepper, to taste

Instructions

  1. First, cut the tomatoes into wedges. Then cut the peaches in half and remove the pit.
  2. Slice the baguette into slices and brush lightly with olive oil.
  3. Place your cast iron grill pan over high heat. 
  4. When the grill is hot turn the heat down to medium-medium/low and place the sliced baguettes on the grill in a single layer (you can brush the slides with oil olive if desired). Cook for 3-5 minutes flipping the baguettes halfway through once there are grill marks on them. 
  5. Continue this process until all of the baguettes are grilled into crunchy crostinis. 
  6. Then grill the sliced peaches on both sides for 3-5 minutes flipping the peach slices halfway through once there are grill marks on them.
  7. Layer the tomato wedges, grilled peaches, and burrata on a platter or wood board. 
  8. Top with fresh basil, olive oil, salt, and pepper to taste.
  9. Place your crunchy crostini around the peach burrata board and enjoy!
